Zucchini Joy

Zucchini on its own is not so fun for kids, but kids love corn, and babies do too, in a pureed form! 
Mixing these two veggies together is a great idea since the zucchini adds the moisture as well as several nutrients, the corn providing carbohydrates, and then the basil enhances the flavour of it all to make a nice little meal for nice little babies! 
 

Ingredients

  • 1/2 cup sliced zucchini
  • 1/4 cup corn kernels
  • 2-3 basil leaves

 

Preparation

  1. Cook the corn in a little water. 
  2. Once the corn is well cooked, add the zucchini and cook for 1 minute, turn the heat off.
  3. Add the basil leaves.
  4. Blend together the ingredients to get a smooth, creamy soup.
  5. Serve warm.
