Preheat the oven to 340º C and grease two loaf pans.
Mix the flour, baking powder, cinnamon and salt by passing them all together through a sieve.
In a separate bowl, mix the ground chia with 4 Tbs of water, the oil, the vanilla, and the brown sugar.
Incorporate the wet ingredients with the dry ones, mixing well and at the end add the grated zucchini. Mix well and pour mixture into greased loaf pans.
Put them in the oven for an hour or until a toothpick inserted comes out completely dry.
