Vegetable Stir-Fry

Ingredients

For the Asian Sauce:

  • 1 Tbs grated ginger
  • 2 cloves garlic, grated or finely chopped
  • 1 Tbs whole cane sugar or honey
  • 1/4 cup soy sauce
  • 1 tsp lemon juice

For the Stir Fry:

  • Sesame Oil 
  • 1 cup broccoli pieces
  • 1 medium carrot, chopped into medium strips
  • 1 small white onion, chopped into medium feathers
  • 1/2 red bell pepper, coarsely chopped
  • 1/2 cup sliced ​​mushrooms
  • Any other vegetable of your choice 
  • Sesame Seeds 

Preparation

  1. In a large, hot frying pan, place a small stream of sesame oil and immediately add the Broccoli and mushrooms.
  2. Let these start to cook and once they are slightly cooked, add the onion.
  3. When the broccoli starts to turn bright green, then add the rest of the vegetables and the Asian sauce (To make the sauce, mix all the ingredients together.).
  4. Mix well and let the carrots, bell peppers and snapdragons begin to soften slightly.
  5. Turn off the heat before they overcook.
  6. Serve it over brown rice, and sprinkle some sesame seeds on top of the vegetables.
