Spinach Tortilla Pinwheels

Ingredients

  • 2 cups fresh spinach
  • 1 1/2 cups whole wheat flour
  • 1 1/2 cups white flour 
  • 1 teaspoon salt
  • 1/4 cup vegetable oil

Preparation

  1. Heat 4 cups of water in a large pot.
  2. Put the spinach in the hot water for a few seconds until it wilts and then take it out and place in a blender by itselt. (It will hold some of the water and that is fine).
  3. Blend the spinach to make a puree.
  4. Mix the pureed spinach with the salt and the oil inside a large bowl.
  5. Add the flours through a sift and mix to form a dough. 
  6. If needed, add some of the water used to blanch the spinach and make a soft dough but don´t over-knead. 
  7. Divide the dough into 8 pieces.
  8. Using a rolling pin, stretch out each piece to form the tortillas.
  9. Heat a pan, and once it´s hot, place the tortillas to cook them on both sides until golden spots are seen in them.
  10. Once throughouly cooked, place each tortilla in a clean kitchen rag and keep them covered.
  11. To make the pinwheels, spread each tortilla with a favorite spread, such as mayonaise or hummus.
  12. Fill the center with fresh or cooked vegetables of choice.
  13. Roll each tortilla tightly and cut into 2 inch pieces.
  14. Serve the pinwheels with soup or on their own for a great greens-filled lunch!
