Spinach Quiche

With tofu!

It's a favorite for all you tofu lovers out there.

Ingredients

For the crust:

  • 2 cups of whole wheat flour.
  • 1 cups of white flour.
  • 1 teaspoon of salt.
  • 1/3 cup of vegetable oil.
  • 1 cup of water.

For the filling:

  • 9 ounces (250 grams) of spinach.
  • 18 ounces (500 grams) of tofu.
  • 3 spring onions.
  • 2 cloves of garlic.
  • 1 teaspoon of turmeric.
  • 1 teaspoon of paprika.
  • 1/4 cup of cashew nuts.
  • 1/4 cup of water.

Preparation

For the crust:

  1. Mix both flours and salt.
  2. Add the vegetable oil and mix well.
  3. Add the water and mix to make a dough (Add more water if needed).
  4. Kead the dough.
  5. Strech the dough and put it in a quiche pan.

For the filling:

  1. Preheat the oven to 356 F / 180 C.
  2. Chop the spring onions and the garlic minced, and sauté in a frying pan.
  3. Add the crumbled tofu (do it with your hands) and mix well.
  4. Add salt, paprika, and turmeric. Mix well.
  5. Add the spinach, chopped. Mix well.
  6. Add the cashew nuts and water in a blender or a mini food processor. Blend until smooth.
  7. Pour the blend into the frying pan and mix well.
  8. Put the mix in the crust.
  9. Bake for 25 minutes.
  10. Serve and enjoy!

Replace the spinach with whatever ingredient you want, and you immediately have a new quiche! 🤯 🤣
