Orange Muffins

Ingredients

  • 3 cups all purpose flour
  • 3/4 cup turbinado sugar
  • 1/4 teaspoon salt
  • 1 tablespoon baking powder
  • 2 teaspoons baking soda 
  • 3 teaspoons orange zest
  • 1 1/2 cups orange juice
  •  1/2 cup plant based milk 
  • 1 teaspoon vinegar
  • 1/4 cup vegetable oil 
  • 1 Teaspoon vanilla extract
  • 1/3 cup slivered almonds (optional)

Preparation

  1. Preheat the oven to 350 degrees F. 
  2. In a large bowl, mix the dry ingredients, including the orange zest. 
  3. In a medium size bowl, mix the milk with the vinegar, and let it set for approximately 4 minutes. 
  4. Add the vegetable oil, orange juice and vanilla. 
  5. Add the liquid mixture to the dry ingredients and mix until you obtain a slightly light dough. Do not over mix, even if there are some lumps. 
  6. Put the mixture by spoonfuls into a lined muffin pan.  
  7. Place a little bit of the slivered almonds on top of each muffin.
  8. Place the muffins in the oven and bake for 20-25 minutes or until a toothpick inserted into a muffin comes out clean and dry. 
  9. Avoid opening the oven until they are finished baking and look puffed and golden.
