Lemon Poppy Seed Cake

Ingredients

  • 3 cups flour
  • 3/4 cane sugar
  • 1/4 teaspoon salt
  • 1 tablespoon baking powder
  • 2 teaspoons baking soda
  • 1 1/2 cups plant-based milk (almond, soy, coconut, oat, etc)
  • 1/2 cup lemon juice
  • 3/4  cup oil 
  • 3 tablespoons lemon zest
  • 1 teaspoon vanilla extract 
  • 1/4 cup poppy seeds

 

Preparation

  1. Preheat the oven to 350 degrees F. 
  2. Combine the wet ingredients including the milk, lemon juice, oil, sugar, salt, vanilla and lemon zest. 
  3. Add through a sift the flour and the baking powders. Mix lightly until smooth dough forms. 
  4. Add the poppy seeds at the end and mix lightly until incorporated. 
  5. Place on greased rectangle or round cake pan.
  6. Bake for 25 minutes or until an inserted toothpick comes out clean. 
  7. Frost with favorite frosting or serve as is for a delicious treat!
