Babies need their greens as much as adults do, if not more! They're the ones rapidly growing and need calcium in its purest and most effective form, and green leaves will provide just that. 

Brown rice will provide the much-needed carbohydrates for the energy-powered little humans, as well as essential minerals and vitamins that only brown rice can provide.

The pumpkin will bring together this recipe by making it tasty with a little sweetness as well as complementing the vitamins in the greens for full absorption. 

Ingredients

  • 2 medium collard green leaves
  • 1/3 cup brown rice
  • 1/4 cup pumpkin pieces

Preparation

  1. Cook the rice separately without salt and enough water to get  very soft and slightly overcooked rice when done. 
  2. In a small pot, cook the pumpkin until soft. Add the collard greens and blach by turning the heat off and putting the lid on.
  3. Using a hand or regular blender, puree all the ingredients together.
