Walnut and Oatmeal Cookies

Ingredients

  • 1 and 1/2 cups of oatmeal
  • 1 cup whole wheat flour
  • 1/2 tsp salt
  • 1 cup chopped nuts
  • 1 cup carob chips
  • 1/2 cup oil
  • 1/2 cup liquid honey
  • 2 tsps vanilla extract

 

Preparation

  1. Preheat the oven to 350º F.

  2. Grind the oats (dry) in the blender.

  3. Mix the oatmeal with the flour and salt.

  4. Add the chopped walnuts and carob chips.

  5. In a separate bowl mix the oil, honey and vanilla until well incorporated.

  6. Place the mixture of the liquids in the flours and mix everything until it slightly forms a dough.

  7. Place the dough by spoonfuls in a greased tin.

  8. With your fingers shape the cookies.

  9. Bake them for 15 to 18 minutes.
