Potato Salad

Ingredients

  • 5-6 medium potatoes
  • 2 medium carrots
  • 1 cup of baby peas
  • 1 red bell pepper
  • 1 stick of celery
  • 1 white onion
  • salt to taste
  • 1-2 cups plant based mayonnaise
  • Juice of 1/2 lemon (optional)

Preparation

  1. Peel and chop the potatoes into cubes the size of a dice. Cook them with salt until they are soft but not too much that they fall apart. 
  2. Peel the carrots and onion and chop them into very small cubes.
  3. Wash and chop the red bell pepper and celery into very small cubes.
  4. Cook the washed peas and carrots until soft.
  5. In a bowl, place the cooked and drained potatoes and let them cool.
  6. Add the cooked and drained carrot and peas to the potatoes and allow them to cool as well.
  7. Add the chopped celery, onion and bell pepper.
  8. Add mayonnaise, lemon and salt and mix everything lightly.
  9. Serve immediately.
