Coconut Butter

This recipe is an all-time favorite! Made with coconut oil as the main ingredient, it makes it an actual healthy butter! 
If you don´t like the strong coconut taste, you can opt for getting a coconut oil that is refined and thus flavorless/oddorless and the butter will only have the flavour of the other added subtle ingredients. 

 

 

Ingredients

  • 1/4 cup carrot juice (you can blend a medium RAW carrot with one cup filtered water, and then strain to just obtain a clear juice, it will work perfectly).
  • 1/4 cup plant based milk without any sweeteners or flavors
  • 1 tsp. salt (optional)
  • 1/4 cup vegetable oil (avocado, grape seed, sunflower seed etc)
  • 3/4 cup dense/solidified coconut oil

 

Preparation

  1. In a blender, put the carrot juice, the milk, the salt and the vegetable oil and blend until smooth and creamy.
  2. As it blends, add the coconut oil and continue blending until thick and creamy.
  3. Pour the butter unto a butter mold or a small jar.
  4. Refrigerate for a few hours until it hardens.
