Arepas stuffed with Pepitas "Eggs"

Ingredients

For the arepas:

  • 2 cups pan corn flour
  • 2 1/2 cups water
  • 1 tsp. salt
  • 1 tbs. olive oil

For the Pepitas “eggs”:

  • 1 cup pepitas
  • 1 green onions
  • 2 garlic cloves
  • 1/2 teaspoon salt
  • 1/4 teaspoon turmeric powder
  • 1/2 cup chopped tomatoes
  • 1/2 cup chopped green pepper

Preparation

For the Arepas:

  1. Mix the corn flour and salt into the water, kneading gently to form a dough. Let rest for 5 minutes.
  2. Divide into 8 portions.
  3. Using wet hands, shape the arepas by forming a ball and then flattening it with the palms of your hands to form them.
  4. Place on griddle or skillet with a little olive oil. Cover over medium heat for about 5 minutes each side.
  5. Once cooked, stuff them with Pepita “eggs” and avocado.

For the Pepitas "Eggs"

  1. Grind the pepitas in a coffee grinder or blender.
  2. Chop the garlic and the green onions finely
  3. Heat a frying pan and with a little oil, sauté the green onions and garlic.
  4. Add the ground pepitas and the water and mix to form a scramble.
  5. Add salt and turmeric and mix.
  6. Finish by adding the chopped tomatoes and green peppers and cook for just one more minute.
  7. Serve with the arepas and a few avocado slices
