Ingredients
- 2 1/3 of wheat flour
- 2 teaspoons of baking powder
- 1 1/3 cup of brown sugar
- Zest of 2 large lemons
- 1/3 cup lemon juice
- 3/4 cup non-dairy milk
- 1/3 cup vegetable oil
- 1 1/2 cups fresh or frozen blueberries
- 1 teaspoon vanilla
Preparation
- Preheat the oven to 350 degrees F.
- Sift the flour with the baking powder.
- In a separate bowl, mix the rest of the ingredients until smooth.
- Incorporate the two mixtures and add a cup of the blueberries.
- Place the mixture in a greased and floured cake pan and put more blueberries on top, pressing them slightly so that they are left with only the upper part exposed.
- Bake the cake for 50-60 minutes until when inserting a toothpick in the middle it comes out completely dry.
- Let it rest for 10 minutes before removing it from the pan.
- Let cool to serve and enjoy!
