For the "Cheese":
Put all the ingredients in the blender and blend until thick and creamy (about 3-4 minutes).
* The cashew nut is from Brazil which has a very light flavor; due to its high consistency in natural fats and very soft fiber, it is the perfect nut to make a sauce immensely similar to a cheese sauce or bechamel sauce. This nut can be found in "Jumbo" supermarkets or other health food stores or where there is a wide variety of nuts.
** Nutritional yeast is not the commonly known brewer's yeast. They are flakes of a deactivated yeast from molasses, which is widely used in vegetarian and vegan circles for its cheese-like flavor or as a condiment for various recipes and dishes, giving them an exquisite flavor.
