Zucchini Fish

Ingredients

  • 2 zucchini, washed and cut into slices less than ½ inch thick.
  • 1/2 cup chickpea flour
  • 1 Tbs soy sauce
  • 1 tsp garlic powder
  • 1/2 tsp dried parsley
  • 1/2 tsp paprika powder
  • 1/2 cup water
  • 1-2 cups breadcrumbs

Preparation

  1. In a bowl mix the chickpea flour, the soy sauce and the dressings and form a light paste.
  2. Heat a nonstick skillet and brown the zucchini until they soften slightly, for a few minutes.
  3. Pass the sliced ​​and lightly pre cooked zucchini through the chickpea mixture and then through the breadcrumbs.
  4. Put them back in the pan but this time with a little oil so that they are lightly fried on both sides.
