Ingredients
- 2 zucchini, washed and cut into slices less than ½ inch thick.
- 1/2 cup chickpea flour
- 1 Tbs soy sauce
- 1 tsp garlic powder
- 1/2 tsp dried parsley
- 1/2 tsp paprika powder
- 1/2 cup water
- 1-2 cups breadcrumbs
Preparation
- In a bowl mix the chickpea flour, the soy sauce and the dressings and form a light paste.
- Heat a nonstick skillet and brown the zucchini until they soften slightly, for a few minutes.
- Pass the sliced and lightly pre cooked zucchini through the chickpea mixture and then through the breadcrumbs.
- Put them back in the pan but this time with a little oil so that they are lightly fried on both sides.
