Whole Grain & Gluten-Free Pancakes

These pancakes are a staple in our home, as they are easy to make, completely nutritious and very filling. 
The combination of the grain, seeds and chick-pea flour make these pancakes full of protein, and to make them even healthier they are oil free!

Ingredients

  • 2 cups ground oatmeal
  • 1 cup brown rice flour
  • 1/4 cup ground flaxseed
  • 1/2 cup chickpea flour
  • 1/4 cup sunflower seeds or almonds, either must be ground (can be done in a dry blender)
  • 1 tsp salt
  • 2-3 Tbs brown sugar or honey
  • 1 tsp vanilla
  • 3 - 3 1/2 cups of water

Preparation

  1. Preheat a skillet or griddle to cook the pancakes.
  2. Mix all the dry ingredients in a large bowl.
  3. Add the water and vanilla and mix until you have a light dough that does not have lumps.
  4. Lightly grease the pan and put the mixture with a ladle to form the circles.
  5. Cook pancakes for 3-4 minutes on each side until dry and golden brown.

NOTE: Since the oatmeal and flour begin to hydrate and expand, you must monitor and add water a little at a time during the cooking process to maintain the ideal consistency of pancakes.

You can serve these pancakes with different toppings such as:

Peanut butter

Almond Butter

Berry or any fruit sauce

Fresh fruit
