Ingredients
- 1/2 cup cooked quinoa
- 1/2 cup of cooked black beans
- 1/2 red onion chopped in small cubes
- 1/2 cup of cooked corn
- 1/2 cup of red bell pepper cut into small cubes
- 1 handful of finely chopped cilantro or parsley
- juice of 1 lemon
- 1 tablespoon olive oil
- 1 teaspoon salt
- 2 ripe but firm avocados
Preparation
- In a bowl, mix the quinoa, beans, corn, red onion, cilantro or parsley, and bell pepper.
- Season with lemon juice, olive oil and salt.
- Cut the avocados in half and carefully remove them from the skin, discarding the pit as well.
- Fill the hole in the middle of the avocado with the quinoa mixture and serve immediately.
