Ingredients
- 1 cup whole wheat flour
- 1 cup white flour
- 1 cup grated Italian squash
- 2 Tbs hydrated chia
- ¾ - 1 cup sugar (preferably whole or cane sugar)
- 1 tsp vanilla
- 1/2 cup vegetable oil
- 1 tsp salt
- 1 tsp baking powder
- 1 tsp baking powder baking soda
- 1/2 cup plant based milk (almond, soy, coconetc) + 1 Tbs lemon juice (mixed to curdle milk)
- 1 tsp ground cinnamon
- 1 cup walnuts, chopped
Preparation
- Mix together all wet ingredients plus sugar and salt. Add the flours plus the powders and form a light dough.
- Spoon into a greased muffin tin and bake the muffins for 25 minutes or until a toothpick inserted comes out dry.
