Ingredients
- 3 cups all purpose flour
- 3/4 cup turbinado sugar
- 1/4 teaspoon salt
- 1 tablespoon baking powder
- 2 teaspoons baking soda
- 3 teaspoons orange zest
- 1 1/2 cups orange juice
- 1/2 cup plant based milk
- 1 teaspoon vinegar
- 1/4 cup vegetable oil
- 1 Teaspoon vanilla extract
- 1/3 cup slivered almonds (optional)
Preparation
- Preheat the oven to 350 degrees F.
- In a large bowl, mix the dry ingredients, including the orange zest.
- In a medium size bowl, mix the milk with the vinegar, and let it set for approximately 4 minutes.
- Add the vegetable oil, orange juice and vanilla.
- Add the liquid mixture to the dry ingredients and mix until you obtain a slightly light dough. Do not over mix, even if there are some lumps.
- Put the mixture by spoonfuls into a lined muffin pan.
- Place a little bit of the slivered almonds on top of each muffin.
- Place the muffins in the oven and bake for 20-25 minutes or until a toothpick inserted into a muffin comes out clean and dry.
- Avoid opening the oven until they are finished baking and look puffed and golden.
