Ingredients
For the muffins:
- 1 cup white wheat flour
- 1/2 cup wholemeal flour
- 1/2 cup oatmeal
- 1/2 cup applesauce
- 1/3 cup oil
- 2/3 cup sugar
- 2 tsps chia ground
- 1 tsp cinnamon powder
- 1 tsp baking powder
- 3/4 cup plant based milk (almond, soy, coconut, etc.)
For the topping:
- 1/3 cup panela powder
- 2 Tbs cane sugar
- 1/3 cup flour
- 2 Tbs oil
Preparation
- Mix the wet ingredients for muffins first; then add the flours and powders to form a slightly light dough.
- In a separate bowl mix the topping ingredients. Put a Tbs of topping on top of each muffin.
- Put them in the oven preheated to 350º F and bake them for 25 minutes until they are golden and puffy.
