Ingredients
- 3 cups flour
- 3/4 cane sugar
- 1/4 teaspoon salt
- 1 tablespoon baking powder
- 2 teaspoons baking soda
- 1 1/2 cups plant-based milk (almond, soy, coconut, oat, etc)
- 1/2 cup lemon juice
- 3/4 cup oil
- 3 tablespoons lemon zest
- 1 teaspoon vanilla extract
- 1/4 cup poppy seeds
Preparation
- Preheat the oven to 350 degrees F.
- Combine the wet ingredients including the milk, lemon juice, oil, sugar, salt, vanilla and lemon zest.
- Add through a sift the flour and the baking powders. Mix lightly until smooth dough forms.
- Add the poppy seeds at the end and mix lightly until incorporated.
- Place on greased rectangle or round cake pan.
- Bake for 25 minutes or until an inserted toothpick comes out clean.
- Frost with favorite frosting or serve as is for a delicious treat!
