Ingredients
- 1 1/2 cups oatmeal
- 1 cup of wholemeal flour
- 1/2 cup raisins (or cramberries, dried blueberries, etc)
- 1/2 cup chopped walnuts
- 1/2 cup chopped almonds
- 1/2 cup pumpkin seeds
- 1/2 cup of oil
- 1/2 cup of maple syrup (or honey)
- 1/2 teaspoon salt
- 1 teaspoon vanilla
Preparation
- Preheat oven to 350 degrees.
- Grind the oats in a blender or grinder to obtain oatmeal.
- Mix all dry ingredients in a bowl.
- Mix the honey, oil and vanilla in another bowl.
- Combine the two mixtures and form a dough.
- Because of all the nuts, the dough will be loose and coarse in texture.
- Form balls with your hands forming them in your hands by pressing to join the ingredients. Place the balls in a tin lined with parchment paper.
- Bake the cookies for 10-12 minutes until golden brown and dry in appearance.
