Quinoa Salad
This simple salad is ideal to eat as a meal due to its high nutrition and it's also quite filling!
Ingredients
1 cup of Quinoa
1 cup cherry tomatoes cut in half or quarters
1 cup of cucumber cut into pieces
1 large avocado diced
1/2 cup sliced olives
juice of 1 lemon
1 tablespoon olive oil
1/2 teaspoon salt (or to taste)
Preparation
Mix all the ingredients gently and lightly so as not to mash the softer ones. Serve immediately.
