Quinoa Salad

This simple salad is ideal to eat as a meal due to its high nutrition and it's also quite filling!

Ingredients

  • 1 cup of Quinoa
  • 1 cup cherry tomatoes cut in half or quarters
  • 1 cup of cucumber cut into pieces
  • 1 large avocado diced
  • 1/2 cup sliced olives
  • juice of 1 lemon
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt (or to taste)

Preparation

  1. Mix all the ingredients gently and lightly so as not to mash the softer ones. Serve immediately.
