Ingredients
- 5-6 medium potatoes
- 2 medium carrots
- 1 cup of baby peas
- 1 red bell pepper
- 1 stick of celery
- 1 white onion
- salt to taste
- 1-2 cups plant based mayonnaise
- Juice of 1/2 lemon (optional)
Preparation
- Peel and chop the potatoes into cubes the size of a dice. Cook them with salt until they are soft but not too much that they fall apart.
- Peel the carrots and onion and chop them into very small cubes.
- Wash and chop the red bell pepper and celery into very small cubes.
- Cook the washed peas and carrots until soft.
- In a bowl, place the cooked and drained potatoes and let them cool.
- Add the cooked and drained carrot and peas to the potatoes and allow them to cool as well.
- Add the chopped celery, onion and bell pepper.
- Add mayonnaise, lemon and salt and mix everything lightly.
- Serve immediately.
