Ingredients
- 1/4 white cabbage
- 1/4 red cabbage
- 1 red bell pepper
- 2 carrots
- 2 scallions
- 1/4 cup parsley
- 1/4 cup cilantro
- 2 Tbs honey
- 3 Tbs soy sauce
- 1 tsp sesame oil
- 1 /4 cup vegetable oil
- 1/4 cup lemon juice
- 1 Tbs peanut butter
- 1 tsp garlic minced or powder
- 1 tsp grated ginger
- 1/2 cup peanuts
- Salt to taste
Preparation
For the salad:
- Finely chop both cabbages.
- Grate the carrots, if possible on a coarse grater, into thin strips.
- Chop the cilantro and parsley.
- Cut the red bell pepper into fine strips.
- Chop the chives into slices, put everything in a large salad bowl.
For the dressing:
- Put minced or grated garlic in a small container.
- Also put the grated ginger.
- Mix in the bowl with the garlic and ginger, lemon juice, sesame oil, vegetable oil, salt, soy sauce, honey and peanut butter.
- With a fork or a mixer stir everything to make it emulsified and creamy.
- Spoon dressing over all prepared vegetables in a large salad bowl. Mix everything with your hands, squeezing the salad in your fists, so that the vegetables soften and everything is well incorporated.
- Add the peanuts and incorporate lightly.
- Taste the salad and add salt to taste.
- Serve immediately and enjoy the exotic and delicious flavors!
