Ingredients
- 2 slices of dried pineapple
- 1/4 cup dried apricots
- 1/4 cup golden raisins
- 1/2 cup puffed amaranth
- 1/2 cup almonds
- Grated coconut to cover the balls
Preparation
- In a food processor, start by grinding the almonds alone until they are mostly flour-like. There will be bits but it doesn't matter.
- Add to the almonds, the pineapple in pieces, the apricots, the raisins, and the puffed amaranth to the mix.
- Process until everything is ground up and it's like a dough (it's going to be a little loose).
- With your hands, take small portions and squeeze the dough so that it becomes compact, forming balls.
- Cover the balls with grated coconut and serve.
