Ingredients
- 2 cups cooked chickpeas
- 1/4 cup olive oil
- 1 cup gluten flour
- 1 cup breadcrumbs
- 1/2 cup water
- 1/4 cup soy sauce
- 1 tsp thyme
- 1 tsp paprika powder
- 1 /2 tsp sage
- Olive oil for light frying
- 4 garlic cloves, finely ground
- 1 tsp grated lemon zest (optional)
Preparation
- In a bowl, place the cooked chickpeas and grind them with a hand blender or in a food processor.
- Add the rest of the ingredients, leaving the gluten flour to add last.
- Mix the dough well, and let it rest for a few minutes.
- With the hand form the steaks and put them in a frying pan with a little oil to fry them.
- Once they are browned on one side, flip them over to brown the other side.
- Put them in the oven for a few more minutes if you like so that they will firm up as they dry to the desired point.
