Ingredients
- 1/2 cup vegetable oil
- 1 1/2 cups wheat flour
- 2 cups oatmeal
- 1/2 cup water
- 2/3 cup cane sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup of peach jam plus 1/2 cup fresh raspberries (or can be a mix of two kinds of jams or 1 cup of jam from just one fruit of choice)
Preparation
- Preheat the oven to 170° C. Grease a rectangular or square baking tray with oil.
- Mix all ingredients in a large bowl except jams.
- With your hands, press 2/3 of the mixture into the bottom of your pan until even and relatively flat.
- Gently spread the jams, leaving a gap of 1 inch. around the outside (jams will burn if they are against the edge of the pan).
- Using your hands, evenly crumble the remaining 1/3 of the mixture over the top of the jams, pressing lightly so the crumbs stay in place after baking.
- Bake for 25-30 minutes on a center rack until lightly browned on top.
- Cool in the same pan on a cooling rack. Cut and serve!
