Ingredients
- 1 cup rice
- 3 cups water
- 2-3 cups almond milk
- 1 cup of coconut cream (optional)
- 2 cinnamon sticks
- 1/2 cup of honey or cane sugar
- 1 tsp of vanilla
- Grated lemon peel
Preparation
- In a pot, cook the rice with the water and cinnamon. The rice should be cooked for 2 hours until very open/soft. Take out the cinnamon sticks.
- Put the almond milk and lemon peel. Homemade almond milk is usually creamier/thicker than store-bought almond milk, so this should be considered when adding it. If creaminess is lacking, use coconut cream.
- Add the sugar or honey and boil until the liquid is reduced and thick. Serve warm or cold with cinnamon powder on top.
