Ingredients
For the arepas:
- 2 cups arepa flour (precooked corn flour)
- 2 cups cold water
- 1/2 tsp salt
- 1 Tbs oil
For the filling:
- 1 cup textured soy protein
- 2 cups boiling water
- 1 finely chopped chives fine
- 1 garlic clove, minced
- 1 pinch of cumin
- 1/2 tsp of dehydrated thyme
- 3 Tbs of tomato paste
Preparation
For the arepas:
- Mix the flour with the salt in a bowl.
- Add the water with the oil and mix by hand to form a dough.
- Form the arepas with your hand, and cook them in a pan with a little oil until they are golden on both sides.
For the filling:
- Sauté the chopped chives with the garlic in a frying pan with a little oil.
- Add the boiling water, and immediately the soy meat.
- Season it with the salt, cumin and thymee, cook until the water is absorbed by the meat, and it is cooked.
- Add the tomato paste and mix well. Cook for another minute or two.
- Fill the arepas and serve immediately.
Serve with a fresh tomato sauce!
